I can say without reservation that this has been the most popular item I have ever made.
Big Al’s x11 Bacon Candy Recipe
Makes about 4 cups, enough for 32 pieces, regardless if thin or thick sliced. It will keep basically forever so it’s easy to have some extra on hand.
Bacon – Cub brand Farmland Double-Smoked Double-thick cut bacon (about 8 strips per lb.)
4 cups dark brown sugar (= one 32 oz. package)
6 tbsp chili powder
4 tbsp kosher salt
1 tsp onion powder
1 tsp garlic powder
1/2 tsp paprika
1/2 tsp ground mustard
1/4 tsp cayenne pepper
Combine ingredients and mix thoroughly.
Store double-bagged in a zip-top package, with as much air as possible removed.
Place a baking rack over a foil-lined baking tray. Spray rack with non-stick spray. Distribute bacon slices evenly (do not overlap). Bake at 400 degrees for 20-30 minutes. (Switch/rotate trays in oven at 15 minutes if using more than one.) Continue baking until desired crispness. Watch closely after 25 minutes. Remove from oven.
Evenly sprinkle rub on top of bacon slices and pat down (about 1 TBSP per slice). Bake at 315 degrees for an additional 10-15 minutes or until sugar mixture melts. The sugar mixture should be lightly bubbling and shiny. Watch it near the end as it can go from cooked to burned very quickly! If the drippings on the foil smoke, that’s OK. Just be sure to have the hood fan on!
Remove from oven, allow to cool for five minutes, then transfer to a glass or plastic plate. Don’t let it stay on the rack longer or it will stick and be difficult to remove. Don’t use paper towels or paper plates unless you want a paper sandwich!
Save the strained, golden drippings for frying or salad dressings.
